Guest guest Posted October 30, 2009 Report Share Posted October 30, 2009 One of my favorite junk foods adapted for the SCD: + Take 1 or 2 very large carrots (peeled) + Use a vegetable peeler to slice off PAPER THIN slices of carrot + Fry the carrot slices in oil until crispy and golden brown ... be careful not to allow oil to become too hot or your chips will burn! + Dab dry on paper towel to remove excess oil and toss with salt My family devoured these last time I made them! In addition to carrots, this recipe can be prepared with other vegetables as well (radishes, squash, etc.) Really it works with any vegetable that can be sliced paper thin with a peeler or similar kitchen appliance.
