I know that all the legal cheeses are hard, but are all hard cheeses legal? Sometimes it's hard to find how long a cheese is aged, so it would be a lot easier if this were true! Thanks! In the appendix section of BTVC the list of cheeses not allowed are: cottage cheese, cream cheese, feta, gjetost, mozzarella, Neufchatel, primost, ricotta & processed cheeses & spreads. Check the list because some permitted cheeses are to be used only occasionally. Whi! ch should we go by? The official statement on Elaine's website says 30 days. When I started SCD (and there was no official website nor Pecanbread website), it was said to be six months. My thought would be to try the younger cheese and see how you do. If it works for you, then no who-hah.
