I'm leaving (if I manage to unsubscribe!!) after three years reading your messages and contributing as well.

I have had no symptoms for ages although my diet is still a bit restricted BUT I can now eat lettuce!!

I should like to thank everyone for all their advice and help, especially Marilyn, to whom I extend my sympathies at such a difficult time.

I'm leaving you with a recipe that I have heavily adapted from a cook book called Indian Vegetarian Cooking by Jack Santa .

Spinach balls (Sag kofta)

340 gr spinach

1 inch piece of ginger, grated

1 inch piece of turmeric, grated

2 cloves garlic, finely chopped

1 1/2 teaspoons salt

1/2 teaspoon ground cloves

1/2 teaspoons ground cumin

2 1/2 cups almond flour

1 egg

Lightly cook spinach (no water needed, just wash it). Liquidise. Add ginger, turmeric, garlic, salt, cloves and cumin.

Add egg and enough almond flour to make a stiff mixture.

Roll into small balls. Deep fry in coconut oil.
