The gelatin that cooks from the bones in the broth contains proline and glycine, they are amino acids that promote tissue healing (regeneration), and/or start up the flow of stomach juices to further break down the eaten foods. Glycine detoxes the body (helps the liver to detox stuff)Gelatin coats the bowels, so the membrane has a protective coating, just the thing damaged tissue needs! Since reading this article I have started to add more gelatin to my diet. I have often wondered why Elaine had her shortlist for certain foods on the intro, knowing the backgrounds of foodstuffs such as gelatin make it more understandable. Furthermore: Home made broths are best, envelope gelatin may contain MSG. I am waiting for an answer from our Dutch major gelatin manufacturer if their gelatin contains MSG. Also I read that gelatin nowadays is made from skins rather than the bones. Still good for coating the bowels though I should think! A.
