(In a 9 x 13 dish at 350 for about an hour - covered with foil.) Right at the end, sprinkle on Romano cheese and return it to the oven until the cheese is melted. When it was tender and nearly cooked, she would add bread that had been soaked in milk (use SCD bread soaked in yogurt/coconut milk) and stir until the bread was mushed in with the zucchini. She then added grated parmesian cheese and salt and pepper to taste. I comes out like a slightly running mash. Lovely dish. I just use dccc instead of riccota cheese, and cheddar and jack cheeses instead of mozzerella.
