need idea for an SCD Italian pot luck side/mini main dish

I like to make meatballs and bake them in homemade spaghetti sauce. (In a 9 x

13 dish at 350 for about an hour - covered with foil.) Right at the end,

sprinkle on Romano cheese and return it to the oven until the cheese is melted.

Serve with sauteed zucchini or just serve as they are.

T's vegetable lasagna, on the UCLBS web site. I usually add a pound of

ground cooked round to the sauce. AND double the CHEESE.

My italian grandmother would saute onion and zucchini in olive oil and butter. When it was tender and nearly cooked, she would add bread that had been soaked in milk (use SCD bread soaked in yogurt/coconut milk) and stir until the bread was mushed in with the zucchini. She then added grated parmesian cheese and salt and pepper to taste. I comes out like a slightly running mash. Lovely dish. Wish my boys would eat zucchini and my husband could eat dairy!Amelia

don't know if you still need the idea, but eggplant parmegan is my husband's favorite scd food. I just use dccc instead of riccota cheese, and cheddar and jack cheeses instead of mozzerella.
