I also know that we both have 'issues' with spinach. Maybe like PJ suggests, you mix it with eggs in a souffle or with something else higher in fat/protein like creamed spinach with SCD cream and egg to make a cream sauce. I had problems introducing the spinach in it's chopped form, but have found a delicious way to eat it pureed that is agreeing with me. Here is a recipe idea for you (you can pretend it's a quiche In a blender, puree: 4 eggs 10 oz bag frozen spinach (thawed & drained) 1 cup DCCC Pour into greased loaf pan (I used a smidge of olive oil) and bake for 50 minutes at 350 degrees F. If you can tolerate cheese, you can layer it in before baking.
