What to eliminate??

,My husband has problems if he eats too much food either at one time or for the day all together. I also know that we both have 'issues' with spinach. Maybe like PJ suggests, you mix it with eggs in a souffle or with something else higher in fat/protein like creamed spinach with SCD cream and egg to make a cream sauce. Just a thought.Amelia

Spinach, especially chopped spinach, is one of my all-time favorite

veggies. However, in the beginning, I found I didn't do well with any

kind of leafy green veg unless I take some yogurt or take a couple

acidophilus caps with it. I can also not-tolerate the green-leafies if

I'm under stress.

Hi ,

I am also in the beginning stages and know what you are going through!

I had problems introducing the spinach in it's chopped form, but have found a

delicious way to eat it pureed that is agreeing with me. Here is a recipe idea

for you (you can pretend it's a quiche :)

In a blender, puree:

4 eggs

10 oz bag frozen spinach (thawed & drained)

1 cup DCCC

Pour into greased loaf pan (I used a smidge of olive oil) and bake for 50

minutes at 350 degrees F.

If you can tolerate cheese, you can layer it in before baking.
