From what I know about bread machines, they first stay just on low heat for yeast to rise. Almond bread doesn't have yeast, so that would be pointless. Then it kneads the bread to make the gluten more able to give the bread flexibility. Almonds don't have gluten, so that would be pointless. But also: it doesn't take long at all to make almond-flour bread, though it obviously does need adequate baking time. But to mix up the batter takes only a couple of minutes.
