Key Lime Pie Recipe

I'm looking for a key lime pie recipe. There's one on the SCD Recipe

group, but the first 4 steps are confusing me. Instructions 3 & 4

seem to be for a crust also? Can anyone clarify, or does anyone have a

good key lime recipe? Thanks

CarolineCaroline,I would omit the original CRUST ingredients and instructions. It should read like this:Crust:1 1/2 cups Almond [blanched] flour

6 tablespoons. butter, softened3 tablespoons. honeyFilling:

8 ounces. SCD yogurt

4 egg yolks

4 egg whites

1/2 cup fresh lime Juice

1 tablespoon. grated lime zest

1 1/2 cups scd heavy cream, chilled2 tablespoons honeyHeat oven to 350 degrees.

1. Combine nut flour, butter, and 3 Tbsp. honey in a medium bowl; mix well. (this will be like a graham cracker type crust--could try substituting some pecan flour for part of the almond flour).

2. Press into a 9-inch pie plate, and bake until lightly browned, about 12 minutes.

3. Remove from oven and transfer to a wire rack, until completely cooled.

4. Lower oven temperature to 325 degrees.

5. In a medium bowl, gently whisk together yogurt, egg yolks, lime juice, and zest.

6. Pour into the SCD blanched almond and egg whites crust.

7. Return pie to oven, and bake until the center is set but still

quivers when the pan is nudged, 15 to 17 minutes. Let cool completely

on a wire rack.

8. Shortly before serving, combine cream and remaining 2 Tbsp. honey in bowl (this sounds like a lot of whipped cream to me, you might want to reduce to around half or so and don't forget a dash of vanilla!).

9. With an electric mixer, fitted with a whisk attachment. [if your

mixer has one, if not use the standard beaters]. Whisk on medium speed

until soft peaks form, 2 to 3 minutes.

10. Spoon over cooled pie: garnish with zest.

11. Serve immediately. I think I will have to try this one! ; )Amelia
