Then, you can add them to yogurt, to salads, to muffins, … They are very healthy for you but be careful, they are very fatty and difficult to digest. If you can manage pumpkin seeds, they are even better! This recipe is very advanced, given that it’s largely nuts & seeds & dried fruit. Very tasty, don’t eat too many at one sitting! Carol From Grain Free Gourmet, Jodi Bager & Lass (note: recipe can be halved, use a 8x8” baking dish) Sunflower Bars 1 cup unsalted, unsweetened peanut butter (I sub almond butter) 1 cup honey 1 cup chopped pecans 1 cup unsweetened coconut (I sub chopped nuts) 1 cup raw sunflower seeds 1 cup raisins or currants Preheat oven to 350*F (Butter the bottom of a 9x13” casserole dish). Heat peanut butter and honey in a saucepan until melted and smooth. In a bowl, mix together the pecans, coconut, sunflower seeds and raisins or currants. Add the melted mixture to the dry ingredients and mix until well combined. Pour into casserole dish and press flat. Bake for 20-30 minutes. Remove from the oven and let cool before cutting into squares. Store in an airtight container (I lay parchment paper between the layers so they don’t stick).
