Sprinkle with salt and pepper. Bake until well browned and crispy (5-10 minutes if already cooked, longer if starting out raw). 3 Remove from oven, let cool to touch. Crumble and serve over salads, on soup, on twice baked potatoes, etc. How much easier could that be? I think I'll try that next time I buy a whole chicken to make soup because I usually deskin it first. I usually place the skins fat-side down on cookie-cooling racks over rimmed cookie sheets, season and bake at 300F to one hour.
