I seem to think a brittle--not gummy-- is possible-- however am not an experienced candy maker, and would appreciate some information on honeysweetened sweets. I have not made meringues w honey. Hard to imagine it would work. Makes delicious caramel! You can also add in chopped pecans or almond flour. I do 1 C Honey to 1/2 C butter or oil and then I'll stir in a cup of chopped pecans. I haven't tried adding peppermint - I assume I'd add about 1 teaspoon? I'm sure it would be over 10 minutes to get harder for a " brittle " texture. I'm planning to buy a candy thermometer to help with making some candy for Christmas. This is all new to me too! Guest guest Posted December 1, 2009 Report Share Posted December 1, 2009 Glass Candy (from Grain-Free Gourmet Jodi Bager & Lass 1 cup honey ½ tsp. vanilla extract ¼ cup nut butter (cashew, almond, hazelnut) 1 Tbls. unsalted butter (I like to add ½ cup chopped pecans) Boil the honey on low to med-low heat in a medium sized pot for 18-20 minutes, or until it reaches 300*F on a candy thermometer. The honey should boil as vigorously as it can without boiling over. Stir the honey as it boils. Turn off the stove, but keep the pot on the burner. Add the rest of the ingredients & stir well. Spread the mixture thinly onto a cookie sheet lined with parchment paper (I just poured it out). Cover with parchment paper & refrigerate for at least 30 min. until completely hardened. Separate the candy from the parchment paper & break into pieces. Store candy in the fridge (or freezer, with parchment between the layers). Note: It’s normal for honey to darken (My note: I double the recipe and add chopped pecans). Enjoy! P.S. I did try adding peppermint oil to the recipe and it sorta worked.
