Hi,

I'm glad you wrote about this, thanks.

I've been meaning to ask if honey get to the hard stage if cooked long

enough. I seem to think a brittle--not gummy-- is possible-- however

am not an experienced candy maker, and would appreciate some

information on honeysweetened sweets. I have not made meringues w

honey. Hard to imagine it would work. Input appreciated,

If you really want some yummy candy (and can handle that many carbs),

boil honey for a few minutes and then add butter or coconut oil and

boil until it's at the soft ball stage. Makes delicious caramel! You

can also add in chopped pecans or almond flour. I do 1 C Honey to 1/2

C butter or oil and then I'll stir in a cup of chopped pecans.

I've been making the meringues w/honey and it works fine. Just make sure you beat those whites first - like for 10 min! I had the idea today of adding scd legal peppermint extract to the meringues for Christmas

Also, the honey will become firm enough like a soft ball if you cook it long enough? How long approximately? I am interested in making coconut brittle as I saw at my grocery store.

The meringue recipe is on the pecanbread website under stage 1 foods. I haven't tried adding peppermint - I assume I'd add about 1 teaspoon?

I'm thinking it took about 7-8 minutes of a slow boil to get the honey to the

caramel stage. I'm sure it would be over 10 minutes to get harder for a

" brittle " texture. I'm planning to buy a candy thermometer to help with making

some candy for Christmas. This is all new to me too!

Glass Candy (from Grain-Free Gourmet  Jodi Bager &

Lass

1 cup honey

½ tsp. vanilla extract

¼ cup nut butter (cashew, almond, hazelnut)

1 Tbls. unsalted butter

(I like to add ½ cup chopped pecans)

Boil the honey on low to med-low heat in a medium sized pot for

18-20 minutes, or until it reaches 300*F on a candy thermometer. The honey

should boil as vigorously as it can without boiling over. Stir the honey as it

boils.

Turn off the stove, but keep the pot on the burner. Add the rest

of the ingredients & stir well.

Spread the mixture thinly onto a cookie sheet lined with

parchment paper (I just poured it out).

Cover with parchment paper & refrigerate for at least 30

min. until completely hardened.

Separate the candy from the parchment paper & break into

pieces.

Store candy in the fridge (or freezer, with parchment between

the layers).

Note: It’s normal for honey to darken

(My note: I double the recipe and add chopped pecans). Enjoy!

P.S. I did try adding peppermint oil to the recipe and it sorta worked.

I did the peppermint last year, and it is good! Makes the meringues taste like

candy canes :-).

I have no idea, you could try it. Maybe try a small batch (like

half the recipe) first to see if it is good. If you do try it, let us know how

it turns out.
