I keep finding all these great looking recipes using cranberries. I don't see it listed on the pecanbreads stage list. Any ideas of how easily cooked cranberries are to digest? I'm just starting Stage 2 and introducing stuff about every 4 days. I'd love to include cranberries on my Christmas menu!

You do need to cook them pretty well.

When I make my cranberry sauce, I find that the best way is to cook the

cranberries until very tender, then cool, and run through my

Maverick grinder's fine screen -- which removes a whack of heavy skins

and seeds from the mixture. (I have tried using a blender, a hand

blender, and a food processor, and the grinder still makes the best

cranberry sauce.)

I had cranberries in muffins and in apple-pecan-cranberry or

pumpkin-pecan-cranberry compotes my first year, and did acceptably with

them. (Not so with a couple other items!) At Christmas time 2001, I had

been SCD for a whopping 2 months. And there were no Pecan Bread stages

then. <g>

My mom runs the cranberry sauce through a food mill. It takes out all the skins,

and the vast majority of the seeds. It's so very very good, but so very very

high in carbs!

Yep, a food mill is great for these kinds of things.

Keep in mind that although many of us do lower carb diets, SCD is NOT a

low carb diet. It's a SPECIFIC carbohydrate diet. Small portions of

homemade cranberry sauce, made with honey instead of sugar or high

fructose corn syrup, shouldn't be an issue.

<g> I like it a LOT, though, and must scrupulously limit my

portions!

Personally, I cook chicken with cranberries all the time

and do it without any sweetener,

Methinks it's the honey, not the cranberries that are the issue with

carbs! But you are right, and I'm not awake this morning.

Yes, I was talking about the honey in the cranberry sauce. When we make it, I

only eat 1/3 cup a day, which is 35 grams of carbs. That's worse then my half

cup of Welch's grape juice! I could eat much more of it though, because it's

very tasty :-).

I only worry about carbs because it seems like everybody says they're bad for

you. I'm afraid that if I eat as much of them as I like, that I could cause a

setback. Maybe I'm worrying about nothing, but I get paranoid when people talk

about carbs feeding yeast and bacteria.

I only worry about carbs because it seems like everybody says they're

bad for you. I'm afraid that if I eat as much of them as I like, that

I could cause a setback. Maybe I'm worrying about nothing, but I get

paranoid when people talk about carbs feeding yeast and bacteria.

Seems like " they " are always saying a lot of things! Yes, I know,

you can't turn around without someone bad-mouthing carbs. But maybe

if they knew which carbs to eat, they would find it matters which

carbs, not the total count! I'd say just remember the baddie carbs

we aren't eating and maybe not worry too much about the good ones we can eat.
