My son has been on the diet now for about 1 year 1 month and I would like to find him some new things to make with his foods. This diet has been a god send for us, my son stopped talking at 18 months, we began the diet when he was 2 1/2 years old and after a year on the diet he is finally starting to repeat words again, I credit this all to the diet. So we plan on continuing with it but I'm afraid he is getting bored of just having pureed fruits and veggies and broiled meats. Any help would be much appreciated!!! It was really yummy too and the kids adore it--especially with hamburgers. If you can't find the DCCC, you could also experiment with grated provolone cheese and maybe a bit of water to substitute. This is the one that uses nut flour/butter. But Marilyn also said that one could use well cooked veggies instead. Six egg whites, beaten stiff with a few pinches of salt (I used 1/8 tsp).Sprinkle with 4 tablespoons finely ground pecans (or 2 TBSP pecan butter or 1/2 cup well cooked drained pureed veggies).Beat two egg yolks (if using the nut butter or veggies, mix with the egg yolk), and drizzle on. Whip together.Turn out the egg white mixture and spread it out into a parchment paper lined baking tray approximately 13 X 13 or similar. Bake in a 350F preheated oven for 18 minutes. Guest guest Posted January 16, 2010 Report Share Posted January 16, 2010 Kara, The undigested meats may be that he just isn't chewing it well enough. He is pretty young and kids do tend to do that. My middle son always swallowed his noodles whole (even when I chopped them some what)! What foods can he eat right now? You must be a creative genius to be able to feed a small child for over a year on the same foods--and still keep him interested in eating that is! ; ) I would think that muffins would be difficult to make without coconut or nut flours. Have you tried meringues? I am assuming you have tried the egg&banana pancakes. You say the squash buttoms never turn out, but are you baking (versus boiling or other cooking method) the squash first? That would dry them out a bit, or maybe cooking the squash and then leaving it drip overnight like one would when making dripped yogurt.
