Guest guest Posted December 1, 2009 Report Share Posted December 1, 2009 I don't know if I told you guys, but I had a bit of an issue with cheese a while ago. I tested cheddar with my AK doctor, and it was fine, so I started eating it. A few days later, I started getting symptoms, so I tested it again at my next appointment (from the same block of cheddar). This time it was bad! I was baffled. One of my hypotheses was that I had developed a sensitivity to it over that week. My other one was that something had grown on that block of cheese in a week that my body didn't like. I decided to test this, so here's what I did. I tested two cubes of colby jack cheese from a brand new block, and they were good with all parts of my digestive tract. I then took those cubes home and put one in a baggie in the freezer, and the other in a baggie in the fridge. Over a couple weeks, I opened the fridge one a couple times to simulate dishing out cheese from the block, but then closed it tightly with the air sealed out like I normally would. When I went to the AK today, I took the cheeses and tested them again. The fridge one was bad, but the freezer one was fine! So I think this sort of proves my hypothesis that something weird might grow on cheese if left in the fridge for too long, and that this can be avoided if the cheese is kept in the freezer. But, seems like in the last months he's given you a lot of help and a really good start, so perhaps you have a good enough foundation now you won't need him as badly as you did.
