Guest guest Posted December 2, 2009 Report Share Posted December 2, 2009 Here's a yummy sounding Double smoked salmon mousse recipe, good for the holidays, or whenever:double smoked salmon and sesame seed moussehttp://www.telegraph.co.uk/foodanddrink/recipes/6702245/Christmas-2009-recipes-double-smoked-salmon-and-sesame-seed-mousse.htmlThere's just one substitution - use cream or half and half yogurt instead of double cream:Makes 12 shot glasses (or enough for 36 mini oatcakes)4oz/110g cold-smoked salmon3½oz/100g hot-smoked salmon, flaked4½fl oz/125 ml double cream1oz/25g sesame seeds, toasted in a hot pan1 tbsp lime juice1 tbsp lemon juiceGrissini (thin breadsticks) or cheese strawsPut the cold-smoked salmon into a food processor and whizz until very smooth.Briefly whizz in the double cream, then scrape the contents of the processor into a bowl.Mix in the flaked hot-smoked salmon, the toasted sesame seeds and the lime and lemon juices, which will make the mixture stiffen.Spoon or pipe the mixture into shot glasses and serve with grissini or cheese straws.
