Cranberry Apple Casserole (an LSCDL Recipe)

Cranberry Apple

Casserole (an LSCDL Recipe)

1 12 ounce package fresh cranberries

3-4 Granny Apples, peeled, cored, and sliced or chunked

2 cups pecan flour

2 tablespoons cinnamon

1 cup honey

1 stick (8 tablespoons) butter

Peel, core, and dice apples. A spiral slicer is useful. Toss together

with cranberries.

Melt butter, add honey and stir together. Pour over fruit and stir to

coat.

Stir together pecan flour and cinnamon. Toss with cranberries and apples.

Turn into a glass casserole. Bake in a 325°F oven for one hour.

If desired, after baking, top with SCD marshmallows, and place under

broiler for a few minutes.

Variation: Use one quart of cooked pumpkin or butternut squash

chunks in lieu of the apples.

Which tastes better? I have both and love blueberries but never

thought of putting blueberries and apples together!

The blueberry/apple combination is significantly sweeter.

The cranberry/apple has a delightful alternation between sweet apple and

tart cranberry.

<g> Just to make it even MORE confusing, I've also done half

cranberry, half blueberry for my berry mix, and then the rest

apples.

I have never used them with this recipe. This compote is actually an

adaptation of a cranberry and yam bake. The " crumble " that went

on it had flour, oatmeal, brown sugar, and cinnamon. It was topped with

miniature marshmallows. The friend who introduced me to this recipe

loved the marshmallows on it. I never cared for them, so quit using

them.

I increased the amount of nut flour compared to the amount of flour to

compensate for the liquid in the honey, and added a little extra cinnamon

because the heaviness of the nut flour seemed to call for it.

I've never bothered with SCD marshmallows for it because I'm too busy

making the rest of the meal to be bothered... and no one in our family

misses them!

Thanks. I'm not a big marshmallow fan, either. In fact, the only thing I liked them in was rice krispie marshmallow treats--which of course are illegal. Even then they weren't my favorite thing.  I was intrigued by the possibility of an SCD marshmallow, though. Who'da thunk?
