With cheese, my nutritionist suggested string cheese as it's low in fat. As

to sodium, I didn't read, but I will check it. I know I'm supposed to watch

that too. I also purchased some fat-free cheese, but haven't tasted it yet.

Ewwwwwww, tried the fat free cheese, didn't like it, Joan, but that

is just me...never liked much of anything fat-free could be why I'm

overwieght...As for cheese I mostly stick to string cheese, I get a

bunch, throw it in a bowl in the fridge, that way the kids can grab a

good healthy snack too. I looooooooooooove all kinds of cheese and

really have to watch myself, or that would be my only source of

protein. hehehehehehehe! Anyway, just had to throw that in there.

Hannah, ewwwww.....well doesn't make me want to open it! But I will give it

a try and find out. For a long time I've used fat free yogurt, cream

cheese, and sour cream, so maybe I'll be more used to it. I'm a cheese

person too, but have been loving the pre-cooked grilled chicken strips from

Costco. They are great, and gets me away from so much cheese. This

chicken, fish, and hamburger are the only meats so far that agree with me.

Pork just sat in my stomach and ached!

I can't stand the fat free stuff either...It's nasty!! I love string

cheese but it depends on what kind. Lately I've had a problem buying

string cheese and it tasting plastic. The only string cheese that I've

found that doesn't have a plastic consistency or taste is Frigo String

Cheese.......isn't that weird?

Dear Angie,

Cheddar is fine...Elaine suggests mild...I forget why. The BTVC book

gives a whole list of cheeses that are legal/illegal, but processed

cheeses are like " near cheese " , ya know? Cheeze whiz, spray

cheese...even American cheese is most likely processed. But

Jarlsberg, Swiss, Cheddar, Jack, those kinds are fine. NOT Mozzarella

OR Ricotta (I find DCCC/ Dry Curd Cottage Cheese/Friendship Farmers

Cheese makes a good sub for Ricotta in lasagna type dishes anyways)

not because they are processed but because of the lactose I believe.

Members, correct me if I'm wrong on any of this.

Okay, I understand now. Processed is like American cheese slices. I took

processed to

mean if it was cheddar that I bought at Wal-Mart or Kroger, wrapped in plastic,

manufactured by someone, then it was illegal.

God, no! As if this diet wasn't enough work already, right?! Now we

have to make all our own cheese? Sometimes I do feel like buying

myself a goat and keeping her in the back yard, though. ;)

Angie,

I would suggest a period of 2 weeks to a month completely dairy free.

The vast majority of the ASD kids cannot tolerate any cow dairy

products. I would be cautious.

I'd start the diet with no dairy. Then after a couple of weeks, try a

small amount of cheese or homemade yogurt. Keep a food log and track

behavior and attitude. See if he can handle dairy or not.

But yes, cheddar cheese is fine. There is a whole list of allowed

cheeses at the end of BTVC, in an appendix.

Have you tried Calbot or Tilmook (sp)?

I know the legal list of cheese types, but what brands do people buy for their blocks of cheese??  I see Kraft has other stuff in it?

Marla,

We frequently use Tillamook brand cheese and have had no problems with it. Heidi

I can get Tillamook or Cabot in most grocery stores including super Wal-Mart.  We have Safeway and Kroger.
