Guest guest Posted December 9, 2009 Report Share Posted December 9, 2009 Hello everyone! I'm Bruno from Croatia. I' am diagnosed two months ago with ulcerative colitis. I wonder if i could use seitan with SCD diet, it is gluten with all the starch removed. I have been searching everywhere something about it but nothing, just discovered that gluten free diet works for some with celiac and for others not. I understand that it is diet for persons suffering from Celiac, but what about us suffering from colitis? Can we use seitan (gluten)? In SCD, we remove all the gluten and all the starch. I have a book called " Make All the Meat You Can Eat Out of Wheat, " which is about making and using your own seitan. I bought it and read it at the recommendation of a vegetarian friend who was sure that all my gut issues were due to my eating meat.
