I've been making yogurt wrong all this time...

Hi All!

My husband was helping me out by making some yogurt for a weekend trip we are

taking. I asked him how much yogurt starter he put in. He said 1/2 cup, I

thought he was kidding (because I told him to put in a 1/4 cup), we went back

and forth on this for a little while. He claims he followed the directions in

the book. We got the book out and to my surprise he was right! I have a

Yogourmat and have been making it with 1/2 gallon milk & 1/4 cup Dannon yogurt

and now realize it was supposed to be 1/2 cup!. So.......for months I have been

making my yogurt with only half the starter that I was supposed to be using, I

feel like such an idiot. So my question is.....does this mean that there has

been lactose in the yogurt? I've felt fine (just a few issues....like C and

some stomach pains over the past few months.....but thought it was just part of

the process). Please let me know your thoughts.

Holly- the good news is that you feel OK.

It's hard to judge the number of bacteria in the yogurt, how fast they multiply

and use all the lactose. It depends on a lot of factors- temperature, number of

bacteria in the starter- which could vary from batch to batch, and so on. It

could be that your yogurt was OK, but one would never know for sure.

Just go on using 1/2 a cup from now on.
