However, be aware that there are some people who do react to it... see under allergens, here: http://en.wikipedia.org/wiki/tto So if you are having trouble with cheese, you may wish to consider that you could be reacting, not to the cheese, but to the annato. Don't assume it is the cheese from the get go. There are plenty of aged cheeses out there sans anatto. Fortunately there are lots of cheeses without it.
