Starch didn't come to mind as I was buying them, but I was recently reading the section in BTVC where Elaine states that manufacturers usually coat nuts with starch. However, she said " mixed " nuts. As these are only almonds, do you think they may be legal? I tried to find a contact number, but I only came across an address for the manufacturer. It's safer to buy raw nuts and roast and salt them yourself. Personally, I would not trust the ones you bought-- sorry. Remember the 2% rule for processed foods PJ > > Hi all. I would check with the company -- and be sure to ask, not only about " ingredients, " but about " processing aids. " Starch used to help the salt stick is not likely to be considered an ingredient, and they could, legitimately, say, " No, we don't add starch to our roasted salted nuts.
