Help! My yogurt cultured for 36 hours!

Hi There,

I was supposed to put my yogurt in the refrigerator last night at 11pm but I

forgot. I just put it in around 12pm. Is it still good? I could kick myself!

I hope I don't have to throw it out. I'll wait to hear from you all.

Um, no problem.

Remember, yogurt is thousands of years old and was invented before

refrigeration in order to give milk some longevity.

My doc actually recommends that I ferment mine for 36 hours in order to ensure the maximum amount of lactose is fermented out. I think it tastes even better when fermented this long, and it's thicker too.===Posted through GrouplyCreate your own group!www.grouply.com

I ferment mine for 24 h at 100-110 F (which often goes up but not more than

115), and let it drip for 8 h at room temperature. My logic is that that would

give some more time, albeit at a slower rate, for the bugs to ferment.
