smoked salmon- legal?

The ingredients listed are salmon, salt, and hickory smoke. Sounds

legal, but on BTVC it was listed as illegal unless you know for sure

that no sugar was added during smoking. Has anyone found a reliable

source/brand for this?

Spence and Co. - New York Lox and Traditional ish Smoked Salmon

and the ones with the cracked peppers on it at WF and other places.

TJs Wild Salmon Coho and the other kind of Wild Salmon. There are two

of them. These are very salty though. If you can get them, the other

brand is definitely better - and the best one, IMO, by far is the traditional

smoked salmon.

I thought I read somewhere on our boards that liquid smoke was not

legal, though of course I can't find the reference right now. If I am

remembering right.

you have to be careful about the liquid smoke because a lot of times it's "smoke flavoring" and not true liquid smoke. 's makes TRUE liquid smoke that is just condensed concentrated water droplets that trap the hickory smoke and then bottle it. Nothing more. I use it and it has a great flavor. There are some people who consider certain brands of liquid smoke to be

OK.

I do not. That's why I bought a stove-top smoker to smoke things like

ribs and briskets and so forth, with real hickory or other smoke. Oh! the

difference in taste between REAL smoked foods and faked flavors!

I had smoked salmon courtesy of a friend of ours in Milwaukee this summer

-- first time since going SCD. I wish I could set up making smoked

foods for SCDers -- he's a genius at it, and that smoked salmon was to

die for good!

Yum, that sounds good! Marilyn, I am not at all familiar with a

stove-top smoker. Is it very big to try to house? I think that sounds

ideal for smoke flavored foods. The real thing!

Yes, it's easy to use, and I have several recipes. It's a " hot

smoke " device, if you read up on smoking, but really good. You

could make your own BBQ sauce and do ribs and coleslaw for the family!

How long does it take to cook meat this way? I mean, is it just another

way to cook meat so the time is about the same or do you very slow cook

it all day or what? I'll bet the house smells marvelous!

About the standard amount of time. You smoke on the stove top for around

an hour, then finish by baking in the oven.

The neat thing is that the smoker seals so tightly that the house isn't

full of smoke.

But yes, it does smell great.

after the stove top it must go in the traditional oven as well? For how long?

About the standard amount of time. You smoke on the stove top for around

an hour, then finish by baking in the oven.

It's not possible to give you cooking lessons in one email -- you need a

good basic cook book for that. What temperatures, what times, all depend

on what kinds of fish, which parts of the chicken, whether you are

cooking a pork roast or pork chops, whether you are fixing hamburgers, or

ground beef for a casserole, or if you are cooking steaks (and whether

you like them well-done or rare) or making a regular roast or a stuffed

roast.

Chives are an herb, and yes, they are allowed. I use dried chives in my

ranch dressing mix.
