It's last minute and I am so not in the mood to cook anything complicated. He still can't have salads or fruit with peels (though there will be some fruit there I think he can eat), or berries. He also can't do beans yet. So a quick salad is out of the question. I also won't take a cake becase DH won't be willing to share that - lol. It also reminded me of another dish my friend used to make - small oranges (clementines?) peeled, seperated and sprinkled with cinnamon - so simple but very yummy! I might take that as well. Thanks! Guest guest Posted December 20, 2009 Report Share Posted December 20, 2009 I made it last night for my holiday travels (I usually make up a bunch of dishes and freeze them for travel to visit my family in Michigan so it's not so hard for them to make me things I can eat). It's amazing - it's not going to last long enough for the trip. I used mushrooms, onions, and green peppers for the vegetables and chili seasonings while the meat was browning. It's like cheesy lasagna hamburger helper with a Salisbury steak undercurrent (because of the mushrooms). It doesn't taste legal (which is a compliment). The combination of mushrooms and DCCC gave it a mushroom soup taste I haven't had in over two years and the crusty melted cheese on top was like heaven. The only other thing I changed was I used pecan meal rather than almond because it was all I had.Best SCD dish I've ever had. This thing needs a name. Yum, this sounds good! I expect there are a number of things one could add to this mix -- I was using sharp cheddar, but I can't see why you couldn't use provolone or a similar cheese. Stir in some garlic to the meat, some oregano and thyme, chop up some peeled tomatoes and mix that with the cheeses and almond flour and egg.... heck, if you wanted a florentine, you could add some chopped spinach! Because I have my own version of mac and cheese plus veggies that I find really tasty. I just wondered what this one did.
