It is not necessary for you to consume the "bread" for communion. Receiving under either species is sufficient. You can receive from the cup at communion time. You would need to speak to the pastor or one of the priests about how that is best accomplished in your particular church. Most offer both forms at most masses. I have lived in various parishes since diagnosed with celiac disease and I have always worked something out. The priest's chalice will have some fragments of the host in it. The priest will be able to tell you ahead of time which minister of the eucharist will have a chalice with only wine and you will go to that "station". There are low gluten hosts made and sanctioned by the Catholic Church but these ingredients will not be likely to adhere to the restrictions of our diet. Today this is quite easy to work out by receiving from the cup only. I was diagnosed over 20 years ago when no one knew much about gluten free or celiac. It was much more difficult to work these things out then, but you should not have any problems now. Good luck to you.
