What do you use for gravy thickener?

Thanks.

It will be turkey gravy. Last night, I made pot roast. Tonight, it will be roast chicken. So, all of these apply. If you can help me out, I'd really appreciate it.

For turkey & chicken gravy I slice 2 big onions, sautee them in olive oil till translucent, add 4 to 8 cups of homemade chicken or turkey broth, salt, pepper, 2 cloves of sliced garlic. Then I bring to a boil, lower heat and let simmer for about an hour or more. Take off heat, I use a hand blender and blend everything (could take out the garlic) till smooth. I reheat and cook it down a little bit more if needed.It is very good. The first time I made it, I was surprised that it didn't taste like an onion. For meat gravies, I puree some of the meat into the broth that cooks off

the meat. You can also use well-cooked, pureed vegetables, including

onion and celery, if you used that to season the chicken.

You can also use egg yolks -- one yolk per cup of broth. You beat the

yolk and cool broth together in a double boiler, then heat the mixture

over simmering water, stirring briskly with a whisk for 6-9 minutes

(depending on how much gravy you are making!) This method can be tricky

-- if you don't whisk properly, or heat too long, you get scrambled eggs

in broth, which is delicious, but NOT what you are aiming for!

You could add a small dollop of thick yogurt, then let it reduce; or just

let it reduce -- which will steam away a lot of the water in the meat

juice -- and thus thicken it. Then let any excess fat come to the top and

drain it off.
