shredded chicken recipes-does anyone know of some?

Laurie,This recipe for chicken salad (from Pecan Bread - Stage 1 recipes) has been a life saver for me.  I'm still on stage 1, so I make a ton of this stuff & throw it in the fridge for later meals so I'm not constantly cooking.

------------------------------------VEGGIE CHICKEN SALAD

Grind cooked chicken til fine. Add mixture of pureed green beans and carrots

(somehow the flavors seem to cancel each other out, it seems to me).Add salt.

My son will eat lots of this. By gradually increasing the veggies, I now make it

with almost half veggies, and still he doesn't notice it, unless I don't puree the

veggies thoroughly enough.

When I ate meat I really loved throwing some shredded chicken in with half an

avocado and some salt and pepper. So simple but so satisfying!

I like to roast a chicken covered in cinnamon then shred it up and dip it in dripped yogurt.

 

Mini muffins like meatloaf except it's shredded chicken then when you reheat, you put it in a bowl of (I use baby lima beans) but whatever vegetables you can handle and it's like a cup of soup.

 

small grapes, the inside leafy parts of celery that's not stringy, a handful of pecans and homemade scd mayo.  Also good with parmesan crisps.  Just sprinkle parmesan on parchment until it bubbles then let it totally cool off and you have parmesan chips.

Someone mentioned avocado, chop up tomatoes, baby spinach and homemade mayo, shredded cheddar, chicken and it's like a cobb salad.

You can also puree the chicken and add it back into the soup for a nutritious

thick soup.
