I had not thought about using butternut squash as a substitute for sweet potatoes. Also, what recipes did you use for the mock mashed potatoes and dressing? I'll see if I can get them posted in the next day or two. I would definitely use 2 squash the next time so I have even more! Just add the ingredients to taste Gather together:1 Acorn squash ( 2 if they are small)Mild cheddar cheesebuttersalt and pepperlarge glass baking panCut the squash in halfRemove seeds and place upside down on tray with a little waterBake in oven at 375 degrees until water is gone, the squash is soft and smells roastedRemove soft squash from skin and place in bowlAdd grated cheddar (the more the better in my books!) to squash and mixAdd butter, salt, pepper to taste Marla IBS-D 20 yrs SCD 6 weeks From: Wizop Marilyn L.
