Guest guest Posted December 25, 2009 Report Share Posted December 25, 2009 I think it is because of additives in the processing that do not have to be listed on the label (2% of processing aids do not have to be listed) Kitchen Aid makes a crock pot that has a high setting for cooking.. that can bring it to a hard boil. It's pricey, but I love mine. However, no matter how much I boil the heck out of my soups- stove or crock pot, mine don't really gel up. I wonder what I'm not doing. Guest guest Posted December 25, 2009 Report Share Posted December 25, 2009 I used distilled water in the beginning for chicken soup (had to google it because I forgot the name) but I saw an episode on Alton Brown and he said that type of water is 'too clean' and to use purified water. Then I take out all the meat, and put the skin, bones, gristle, etc...all back in the crockpot overnight with some ACV. I wonder why yours doesn't gel? Guest guest Posted December 26, 2009 Report Share Posted December 26, 2009 PJ I usually put 2 pounds/1 kg of chicken wings, 1 onion, a couple of handfuls of baby carrots, 2 sticks of celery, 4 cups filtered water, 2 TBSP apple cider vinegar, 2-3 tsp salt in a large stock pot. I bring to a boil and reduce to a simmer and let simmer for about 4 hours. I turn off heat, let cool a bit, strain all, and leave the broth to cool then chill -- I live somewhere cold, so I just leave the covered broth out in the garage overnight! ; ) Mine comes out so gelled that you can stand a fork in it!
