I think it is because of additives in the processing that do not have to be

listed on the label (2% of processing aids do not have to be listed)

Kitchen Aid makes a crock pot that has a high setting for cooking.. that can

bring it to a hard boil. It's pricey, but I love mine.

However, no matter how much I boil the heck out of my soups- stove or crock pot,

mine don't really gel up. I wonder what I'm not doing. I cook it all day long,

and overnight in the crock pot.

Because the jolly, wonderful folks who make coconut mil decided it needed

to be THICK to show how RICH it is, and starcted putting gums and

starches in it.

So long as it simmers nice and long, it should gel up.

I just put the chicken, or beef bones in a pot, or crock pot with some vinegar

or lemon juice, spices, onion, garlic and celery and cook it forever. It just

stays liquidy and does not form a gel when cold.

I used distilled water in the beginning for chicken soup (had to google it because I forgot the name) but I saw an episode on Alton Brown and he said that type of water is 'too clean' and to use purified water.  After I switched, it always gels.

Then I take out all the meat, and put the skin, bones, gristle, etc...all back in the crockpot overnight with some ACV. I wonder why yours doesn't gel? I just cook the whole chicken. Maybe that is the problem- I don't get to the

bones, but it happens with just beef bones too. I will try just the chicken

bones and see.

I usually put 2 pounds/1 kg of chicken wings, 1 onion, a couple of handfuls of

baby carrots, 2 sticks of celery, 4 cups filtered water, 2 TBSP apple cider

vinegar, 2-3 tsp salt in a large stock pot. I bring to a boil and reduce to a

simmer and let simmer for about 4 hours. I turn off heat, let cool a bit,

strain all, and leave the broth to cool then chill -- I live somewhere cold, so

I just leave the covered broth out in the garage overnight! ; ) Mine comes out

so gelled that you can stand a fork in it!

I'm going to try this. I think I'm using too much water which makes it too

liquidy too.
