What coconut for macaroons?

I got my egg whites nice and fluffy finally! (was using plastic mixing bowl that was the problem) but, i'm using coconut flour from digestivewellness.com and when I add that it it immediatly kills the fluffy egg whites and turns them back into liquid. Maybe i need to use coconut flakes? Or shredded coconut? I think the flour might be too dry and is soaking up all the moisture. What does everyone else use? Brand, place you get it from would be great. There is an amazing coconut macaroon recipe on Elana's Pantry that you

should try. Just sub honey for agave. And yes, use shredded coconut.

I get it in a green package from Whole foods. Sorry, I don't recall the

brand right now.

They turned out perfect and my kids and I devoured them.
