Guest guest
My sister made some delicious looking meat pies for Christmas dinner. She made some legal filling for my son and me with just ground beef, cabbage, onions, salt and pepper and we wrapped it up in our egg-based flat bread. I started to wonder if I could make something that resembled what she made (yeast bread buns filled with the meat mixture). I'm sure I didn't get the perfect taste, but the result was enthusiastically devoured by all my kids and my husband. Here's what I did: 1 lb. ground turkey (or beef) 1 medium sized onion, almost pureed in mini chopper 1 small clove garlic, finely minced salt and pepper - just until it " seemed " the right amount Mix together and form into small, thin patties. About 2-1/2 " to 3 " in diameter and as thin as possible. Cook patties in fry pan over medium heat until they are no longer pink in the middle. You'll have a couple of extra meat patties to munch on unless you make more egg mixture. While meat patties are cooking: 8 egg whites 4 egg yolks 1 C almond flour 2 tsp. butter 2 tsp. honey 2 dashes of salt Beat egg whites until they form soft peaks, maybe a bit longer. Then beat egg yolks, butter, honey and salt in separate bowl. Sprinkle almond flour on egg whites, pour yolk mixture over all and gently stir until mixed well. Then: Put parchment paper on a large cookie sheet (one with holes works the best). Make 12 little " piles " of egg mixture about 3-1/2 " across and 3/4 " high. Gently place a warm, meat patty (patted dry with paper towel!) in the middle and then top with more egg mixture and " seal " all around the meat. Bake in 350 oven for 14 minutes, then turn oven off and leave in for 3-4 more minutes. These aren't crumbly at all and they taste great. One daughter asked for cheese in the filling next time. I'm already thinking of a pizza type taste to experiment with. I hope that someone else will have good luck with this too! Liz
