RECIPE: Quick BBQ Sauce

1 Pint Grape Tomatoes

3 Roma Tomatoes

½ green bell pepper

½ white onion

6 cloves garlic

1 Jalapeño

Approx. ½ cup honey

Approx. 1 teaspoon cumin

Approx. 1 teaspoon chili powder

Approx. 1 tablespoon salt

Approx. 1 tablespoon cayenne

This was just thrown together on a whim so I could eat some ribs but I couldn't

get enough.

Chop roma tomatoes, onion, bell pepper, garlic, and jalapeno (remove the ribs

and seeds if you want it to be milder). Add the first 6 ingredients to a blender

with the tomatoes on bottom and blend until smooth. Empty contents into a

saucepan over medium to medium high heat. Add honey, cumin, chili powder and

salt. Cook, stirring constantly for about an hour to and hour and a half for a

quick BBQ type sauce. It took and hour to reduce by half and it really needed a

little bit more reducing. Add cayenne and more salt/honey if desired.

Next time, I'm leaving out the pint of grape tomatoes and adding a little more

honey as it didn't stick to the ribs that great during cooking. This was a sweet

and spicy BBQ sauce. If you have time, start it over medium low heat and stir

often until it's cooked down to the consistency you like. Since it's a BBQ, its

needs to be a little thick.

*If you are a beginner, you'll want to use peeled and deseeded tomatoes.

Misty: yum!A keeper.Have you ever tried to thicken something in microwave? I wonder if it would work? I could see that stirring might be needed to avoid boiling over, unless in very large container-- but scorching might not be a concern. As for microwaving, no I have never tried. However, I was at a friend's house

and he's very cooperative about my diet so this concoction was both of us, but

originally it was his idea. He says he's cooked and thickened in the microwave

before. I didn't ask him the specifics, but I'm sure it would work. You could

probably even put it in the oven on super low all day and enough would evaporate

to make a nice thick sauce.
