What are some good combinations of herbs/spices to use to season

different things? (fish, turkey, chicken...)

I like fresh thyme if I can get it on baked chicken.  Garlic, lemon and salt seem to go on anything for me.  (I only like catfish and shellfish--so lemon may not work with all fish imho lol).

 

Sweet paprika for veggies or cayenne or just white pepper and sea salt.

 

I like a whole roasted chicken in cinnamon--unfortunately everyone else in the house thinks I'm nuts ;-)  Goes great with dripped yogurt.

 

I love this site called Cooking for Engineers.   Has a lot of information on cooking.

 

I'm more a trial by error (insert error) so Marilyn, Mara and Misty, etc. will have much better advice for you!

Thyme - good on pork and chicken

Rosemary - good on pork, chicken and beef

Basil/Oregeno mixed is good on chicken

I like to mix thyme and rosemary on chicken, pork and beef

Some recipes. Since you don't tolerate onions, just leave them out.

Chicken with herbs and fruit

1 onion chopped

3 apples, peeled, cored and sliced in thick chunks or a bunch of grapes

3 large chicken breasts with bone and skin on

6 cloves garlic minced

salt/pepper

1/4 cup minced rosemary or thyme

olive oil

mix apples (or grapes) with onion, 1/2 the garlic, about 1/8 - 1/4 cup olive

oil, 1/2 of the rosemary (or thyme), salt/pepper/red pepper flakes (whatever you

like).

lift the skin on the chicken, sprinkle salt/pepper/red pepper flakes and the

remaining garlic and herbs. put the skin back in place and brush the skin with

the remaining olive oil.

add fruit mixture to a baking dish, arrange chicken on top, kinda push the

chicken down into the fruit mixture so it kinda comes up the sides of the

chicken.

bake in a 350 degree oven until the chicken is done 45 min - 1 hour.

you can broil the chicken for a couple minutes to get the skin crisp if you'd

like.

Steak:

1 pound thin steak

2 TBS chopped rosemary

2-3 slices legal prosciutto

2-3 slices provolone cheese

salt/pepper/olive oil

if your steak isn't thin, pound it until it is. cut into 2 or 3 strips. in the

strip, salt and pepper the steak, sprinkle on rosemary, add a slice of

prosciutto, a slice of provolone and rollup like a pinwheel. use toothpicks to

secure the roll. brush olive oil on the outside and add a little more

salt/pepper. in a hot cast iron skillet (my fave), brown the steak quickly on

each side. put the steak in a 350 degree oven for about 3-5 minutes. remove of

skillet and let rest 3 - 5 minutes before serving. the original recipe called

for sage, but i didn't like the way sage and beef tasted.

Pork chops:

medium thickness pork chops

1 TBS chopped thyme

1 TBS copped rosemary

oil/salt/pepper

brush olive oil on chops, sprinkle both sides liberally with salt/pepper/thyme

and rosemary. in a medium high skillet, brown both sides of the pork chop and

put it in a 350 degree oven until done... about 10 minutes. my meat thermometer

is my best friend for not overcooking food.

chicken with squash bacon and rosemary

4 or 5 zucchini squash cut into discs (peeled if needed)

4 or 5 yellow squash cut into discs (peeled if needed)

1 large onion chopped

6 cloves garlic minced

salt/pepper/red pepper flakes

olive oil

1/4 cup rosemary chopped

6 chicken breasts

about 10 slices bacon

toss squash discs with onion, 1/2 of the rosemary, 1/2 of the garlic,

salt/pepper/red pepper flakes (if you like it a lil spicy), and about 1/8 cup

olive oil.

Brush olive oil on both sides of chicken breasts. sprinkle both sides with

salt/pepper/rosemary and garlic. take a piece of bacon and wrap it around the

chicken on a diaganol. you'll need about 2 pieces per chicken breast. make sure

the bacon completely surrounds the chicken.

place in a 350 degree oven until the chicken is done. about 20 - 30 minutes.

remove chicken and continue cooking squash for a total cooking time of 1 hour.

hope these help alyssa. it makes a lot of food so i'm able to eat on it for a

few days or freeze it.
