I made it this week - the SCD fixes are prettyminimal and obvious - first, use legal beans - I used red kidney,instead of pinto which are not legal. no sugar, substitute honey if you wish -- it's only 1/8th of a teaspoon, so you wonder why bother. Use a legal tomato paste, or skip it altogether. And sub. nut meal or SCD breadcrumbs, in place of regular breadcrumbs. I used Cento canned tomatoes, which we recently got a letter for. Oh, I also multiplied the cheese topping a lot, a lot, since,really, it's all about the cheese melting into the tomato sauceand tasting pre-SCD. SCD official disclaimer follows: Remember, beans are an advanced food! I soaked the beans for 24 hours and have had no problems with them. But I also spaced out the servings for several days and skipped one altogether, just in case.
