I know that we have to ferment the yogurt for at least 24 hours to use up the lactose. What happens when someone uses coconut milk to make their yogurt? Does it still have to be fermented for 24 hours since there's no dairy to begin with (especially if they use a nondairy starter)? I added a little bit of honey and gelatin to the milk once it was heated, blended well, cooled and then added the starter and fermented. If you don't add the gelatin, it won't be firm.
