Cooked this to rave reviews last night so I thought I'd share it

Pork Chops Braised in Apple Cider

½ Tbs Butter or coconut oil

Olive Oil (to barely coat bottom of pan)

2 thick cut pork chops or 4 thin cut

1 cup apple cider

Spice Mixture:

½ tsp cinnamon

1 tsp coriander powder

1 tsp cumin powder

salt & pepper

Preheat oven to 350

In a deep oven safe pan or dutch oven, warm butter & olive oil.

Wash & dry meat. Thoroughly coat both sides with spice mixture. Carefully place in hot pan and sear both sides until browned - about 4 minutes per side. Make sure it’s well seared to seal in the juices.

Push pork chops to the side of pan, reduce heat to medium, add apple cider and deglaze the pan. Spread chops back out to cover bottom of pan, cover and place in oven for 10-15 minutes. I like 20-25 minutes even better J Pork chops will be succulent and juicy.

Optional Apples: Add peeled, apple quarters when you deglaze pan. Cook on stovetop till apples are soft (about 4 min), then slide pork chops under apples and put the whole thing in the oven. Serve pork chops with apples and a little of the braising juice drizzled on top. Yum!

Optional Rum: Deglaze pan with ¾ cup of rum, then add ¼ c apple cider, apples, etc. Alcohol will cook off & sauce will be thick and sweet to drizzle over chops for serving.

I actually doubled the spice mixture and cooked a family pack of 8 fairly thick pork chops so we could have leftovers one night this week. OMG they were sooo delicious, I may have one for breakfast this morning...LOL
