Guest guest Posted January 14, 2010 Report Share Posted January 14, 2010 I'm in trouble. Can't eat without incredible gas and pain. Was on laxatives for years. I'm hypoglycemic and disabled with Panic Attacks. I had to take antibiotics 3 months ago and haven't been right ever since. I recently went to the hospital. I also followed up and got blood work from my doctor done. I'll have the results this Friday. I have sent for Elaine's book. It's on its way. I'm alone in a rural town in Texas and very frightened about all this. I've started the Beginner's Diet. But, out here in rural Texas there's NO dry curd cottage cheese and I can't afford a yogurt maker until next month (my only resource is my disability check - I won't tell you how much - no one would believe I'm able to survive on that little each month!). So, I must make the cheesecake with fat-free cottage cheese and buy Dannon Plain Yogurt instead of making my own. I figured if Elaine was using it for the 'starter' I just might be able to get by until I can get the yogurt maker. I'm trying my best to stay as close to the diet as possible with the few exceptions I've mentioned above. Does anyone know if the above two adjustments will ruin what the diet is trying to do to help me clean up inside? I don't have my book to read yet to see if my adjustments are 'legal' until I can find a DCCC source (which I would need to get with Food Stamps - so I can't order it online) and get the yogurt maker. I bought one and am sorry I did. I rarely use it; a waste of money.You can make yogurt in a medium-sized saucepan with a cover and by incubating in in your oven with the oven light on.>> So, I must make the cheesecake with fat-free cottage cheese and buy > Dannon Plain Yogurt instead of making my own.Use the Dannon Plain as your starter; mix about 1/3-1/2 cup with a quart of half-and-half and half a quart of whole milk (or some combination; I like that that one because it's very tasty and cheaper than using all half-and-half. Or you can use only whole milk, which is cheaper yet. And it will fill your medium saucepan till about 3/4 inch from the top. Heat the half-and-half/milk or jsut milk to nearly boiling. Let it cool. If you don't have any kind of food thermometer, let it cool until it's cool enough to stick your finger into without burning it (still very warm but not painfully so!). Then add the Dannon starter. Stir and put it in your oven with the light on. This works for a gas or electric oven. (Put the light on before you start the process so it has a chance to get a bit warm. Take it out 24 hours later and refrigerate in some other container. That's all there is to it. Don't eat regular yogurt that hasn't been fermented for 24 hours. You'll consume way too much lactose and will likely have more problems than you have now.Also, you don't NEED to use dry curd cottage cheese. It's nice if you really like it and have an inexpensive source to buy it from. But it's not a necessary part of the diet. I'm not sure how you'd remove the lactose from regular cottage cheese. There is Lactaid brand lactose-reduced cottage cheese, but it's not really SCD legal; and it's also expensive. And right now it would no doubt increase your eating pain and misery, so I'd stay away from that also. You just turn on your oven light so the oven warms and follow the regular instructions in the book for yogurt making and then you set the yogurt in old clean glass jars near the light with a thermometer - like the kind for making candy - and you'll find that it will be within range. If you have to cook something in the oven, just take the yogurt out and cover with some cloths for a few hours and wait until the oven goes back to regular temperature before putting the yogurt back in. Guest guest Posted January 14, 2010 Report Share Posted January 14, 2010 feel free to bare your soul - sickness does this to us and this group is here to help each other thru - because NOONE gets it!!! unless they're living it sorry, venting a bit today as I don't feel good and hubby made a comment that he misses the old days of going out to eat ,vacationing without problems etc and why did I have to get sick - in a joking way - but it hurt I don't want to be sick, I'm on SCD to get better and I have - he's now blaming SCD for all these other probs that are going on that I didn't have before pancreas,kidney,thyroid etc etc - sick of defending my diet - and here you don't have to! anyway... you should wait for your book and maybe just remove dairy/gluten to start if you haven't - for now as those aren't ok on scd - i get farmers cheese at shoprite by me i'd eat eggs (if no diarrhea) meats veges and homemade soup until you get yourself ready - you don't need the dccc or yogurt - not everything is mandatory - also breakingtheviciouscycle.info has lots of info plus pecanbread.com - that should help you to start hang in - good luck - ask anything -share anything -keep track of what your eating,your BM's,any reactions good/bad to figure what's right for you - everyone is different - 1 food at a time for 2-4 days - go slow - vitamins etc count too - make sure they're legal and introduce them separately eileen 2 years scd > > I'm in trouble.
