I always have bread and muffins in my fridge, so DH gets a sandwich and muffin almost every day at work. I make a cheese sandwich usually (with mayo, mustard, onion, tomato, avocado & lettuce). Sandwiches are always my go-to for a packed lunch.

Another quick one is apple with peanut butter. I slice the apple and make little "sandwiches" from it.

I make SCD mayo and mix it with legal canned tuna. You can put some legal mustard in it if you like that, and I put in cut up cubes of swiss cheese. Then I put that on the SCD hamburger buns. The buns are much sweeter than the loaf of bread, and give the sandwhich an amazing taste. I use almond butter for a quick snack, on slices of apple or turnip,

or lettuce. Sometimes on slices of carrot if the carrot is big enough

to make about one-inch wide slices, an eighth of an inch thick, if

that makes sense.

My digestion doesn't tolerate much, particularly snacks and nut flour items like bread. Instead I make large batches of cooked veggies and baked meats so that I always have left-overs in my refrigerator. Easy to make a quick meal or snack. I cook more on the weekends/days off and put a lot in the freezer. I usually have to cook veggies during the week as well, but that is simple in the evening or early morning. I cook full pots of veggies, enough for 4 or 5 servings, which for me is about 3 days.

For work I make a normal sized lunch and eat it in two parts plus bringing a late-afternoon "snack" of applesauce and peanut butter or more veggies and meat. On long days when I have early meetings, I bring my breakfast with me as well as lunch and snack. My coworkers have become accustomed to my having a lunch bag with me and eating during breaks [grin].

boiled eggs

slices of cheese

legal proscuitto or pancetta

chicken or tuna salad wrapped in lettuce if you tolerate

i like to take a dried fig or date, add a small slice of cheese and wrap it in

proscuitto.

tuna from a can

if you have a microwave

chili with lots of cheese melted on top (on big pot lasts days)

roast with veggies (in the crock pot)

saute chicken in a skillet serve with well steamed veggies you tolerate. this

heats well at work.

Peanut butter is what caused me to fail on the diet the first time. I still

can't tolerate much so be very very careful with PB. My fave snack that did me

in was sliced banana with a small dollop of PB and drizzled with honey. And, the

hot nut flour breakfast. I was so uninformed about the diet back then. If you

want to try nut butter early, try pecan butter. For most, it's the easiest to

digest. 2 years on the diet and I can still only handle nut butters and flours

in small amounts.

if you can't do fruit, i add van and cinn on top of son's dccc cheesecake topped

with goat yog - he's not picky but he wasn't too thrilled with it before i added

those, as we can't do honey either so the cheesecake needs something - i top

with cooked berries but haven't gone there with him yet
