I make a cheese sandwich usually (with mayo, mustard, onion, tomato, avocado & lettuce). Sandwiches are always my go-to for a packed lunch. Another quick one is apple with peanut butter. I slice the apple and make little "sandwiches" from it. You can put some legal mustard in it if you like that, and I put in cut up cubes of swiss cheese. Then I put that on the SCD hamburger buns. The buns are much sweeter than the loaf of bread, and give the sandwhich an amazing taste. Sometimes on slices of carrot if the carrot is big enough to make about one-inch wide slices, an eighth of an inch thick, if that makes sense. Instead I make large batches of cooked veggies and baked meats so that I always have left-overs in my refrigerator. Easy to make a quick meal or snack. I cook more on the weekends/days off and put a lot in the freezer. I usually have to cook veggies during the week as well, but that is simple in the evening or early morning. I cook full pots of veggies, enough for 4 or 5 servings, which for me is about 3 days. For work I make a normal sized lunch and eat it in two parts plus bringing a late-afternoon "snack" of applesauce and peanut butter or more veggies and meat. On long days when I have early meetings, I bring my breakfast with me as well as lunch and snack. My coworkers have become accustomed to my having a lunch bag with me and eating during breaks [grin]. Guest guest Posted January 16, 2010 Report Share Posted January 16, 2010 boiled eggs slices of cheese legal proscuitto or pancetta chicken or tuna salad wrapped in lettuce if you tolerate i like to take a dried fig or date, add a small slice of cheese and wrap it in proscuitto. tuna from a can if you have a microwave chili with lots of cheese melted on top (on big pot lasts days) roast with veggies (in the crock pot) saute chicken in a skillet serve with well steamed veggies you tolerate. this heats well at work. are you looking for something specific? I still can't tolerate much so be very very careful with PB. My fave snack that did me in was sliced banana with a small dollop of PB and drizzled with honey. And, the hot nut flour breakfast. I was so uninformed about the diet back then. If you want to try nut butter early, try pecan butter. For most, it's the easiest to digest. 2 years on the diet and I can still only handle nut butters and flours in small amounts.
