I usually start beef during the day and leave it overnight. So you could start it when you come home from work, leave it, and use it the next day after work. You could do chicken in the morning and have it after work. I usually make a lot and freeze in portions so I'm not doing this every day. http://www.trit.us/foodfeatures/broth.html Note- this is not an SCD source, so adjust the recipes for SCD- I did not see illegals, but you may not tolerate all the additions to the broth in the recipes. The only problem I have with cooking overnight is it smells so yummy it sometimes wakes me up at night hungry. I make sure the kitchen is well ventilated. I've been giving my son a small cup of broth at least a couple of times a day and even he's noticed how much better he feels. He's actually asking for broth now. Many battery-raised chickens will not produce stock that gels."Maybe that's the problem some of you are having with chicken broth not gelling. She only cooked it 4 hours (nothing special done to the bones, since they were still in the chicken ;-)), and the broth is almost as thick as jello!
