Guest guest Posted January 13, 2010 Report Share Posted January 13, 2010 Here are 2 of my favorite chicken recipes (You can also make chili in the crock pot - using ground turkey if you eat turkey. And don't forget soup - really easy in the crock pot..) Anyway, my favorite thing to do with a chicken is just cook it whole in the crock pot. It comes out sooooo soft and tender and yummy. I cook mine close to 8 hours, and it really falls off the bone. Another one I like: Moroccan Chicken 8 chicken drumsticks (about 1.5 lbs), skin removed (I use small thighs also) 1 can (8 oz) pineapple chunks in own juice, undrained 1 large onion, chopped (1 cup) 2 cloves garlic, finely chopped 2 tbsp lemon juice 1 tsp salt 1 tsp dried marjoram 3/4 tsp crushed red pepper (DH doesn't like spicy so I just use a little regular pepper) 1/4 tsp turmeric Place chicken in crock pot. Mix pineapple, onion, garlic, lemon juice, salt, marjoram, red pepper and turmeric. Pour over chicken. Cover and cook on low 4-5 hours. The original recipe calls for removing the chicken when done, mixing the sauce with cornstarch, and adding olives. I don't bother since cornstarch is illegal and I'm too lazy to figure out how to thicken the sauce, but if you can think of a way (I know it's been discussed here before), go for it. It's yummy even without a thick sauce. A friend emailed it to me aout a year ago when she gave me a crock pot as a gift. I just create a folder i my email system called "Ready Reference" or something like that and move great emails like this to that folder. Or you could always copy and paste it to a Word file and store in a recipe folder or something. Enjoy.
