Hi,

Some of us on SCD do not want to gain weight. every so often this

comes up with a call for recipes.

Here is one of my current favorites. I realized that eating items

made w nut flour --while yummy, had zillions of calories. Also, I'd

been doing too much nuts and my body wanted me to back off.

I used to love having oatmeal every day for bkfast-- my body put the

brakes on that long before I was fortunate enough to have a friend

turn me on to SCD.

This is not a daily bkfast for me-- but easily could be.

Spaghetti Squash and Eggs

Sort of self explanatory.

quite yum! Cook Spaghetti Squash. I microwave to save time**. Cut--

with sturdy knife-- open the squash. Remove seedy part. If you are

able to eat nuts/seeds, you may want to taste these-- I like them even

un-roasted.

Pu a chunk of squash in microwave safe dish and cook till strings are

viable.

Meanwhile, prepare eggs. I like them either soft boiled of poached.

Remove cooked squash from mocrowave, pull out strings onto bowl, top

with egg, salt and sigh with pleasure.

this has been a quick and yum bkfast-- well, a good meal any time.

Squash less calorically dense--for those of us who care-- than nut

flour items.

OK, look forward to hearing other suggestions.

** Can certainly roast the squash in regular ove, Cut in half,

remove seedy part, place cut side down on baking sheet. If you have

one with raised edges, it has been suggested that ypou put the edge of

squash up on raised edge, so squash slightly dries as it bakes. A

nice touch. It will be fine either way.
