Guest guest Posted January 17, 2010 Report Share Posted January 17, 2010 Cut a couple of avocados in half, remove seed and scoop out the pulp. Mash with a fork to get a creamy consistency. Mix in 1 T lemon or lime juice (to keep it from turning brown) 1/2 tsp salt dash of pepper 1-2 T finely minced cilantro Depending on your tastes and food tolerances you can mix in: 1/2 minced onion 1/2 minced tomato (seed and skin removed) 1-2 minced serrano or jalapeno (seed, pulp, and skin removed) You can also use avocado, lemon juice, salt and pepper as a substitute for mayo. Here's another avocado recipe we've been using in my house for years. There's a lot of herbs, but it always has a fresh, yummy taste. Avocado Bruschetta 2 Avocados peeled, pitted, cubed 2 Tbs lemon juice 2 Tbs red wine vinegar 3 cloves garlic (1 Tbs minced) ¼ tsp salt ¼ tsp pepper ½ tsp red pepper flakes ½ tsp dried oregano ¼ cup olive oil ¼ cup chopped fresh cilantro (or 4 tsp dried) - I use 2 tsp ¼ cup chopped fresh parsley (or 4 tsp dried) Mash avocados with a fork. Add remaining ingredients and mix well. Get creative and adjust it to your own taste. Sometimes I add more lemon, or garlic or red pepper flakes… just for variety Best if you refrigerate for an hour to let the flavors meld. Are there any ingredients typically in brands of pork rinds that are not acceptable on SCD? What crackers do you use? Thanks! Guest guest Posted January 17, 2010 Report Share Posted January 17, 2010 Like any other processed food pork rinds would be a risk (and they're loaded with fat), but my son and I both tolerate it well. He desperately needed a chip and dip kind of food in the dorm so I just check ingredients closely. They're usually just pork rinds and salt. For crackers I make bread in big batches (like 3-5 loaves at a time). Then I refrigerate overnight so I can slice very thin (like 1/4 inch), cut each slice in half to get cracker-size, and put it in the dehydrator on high for 8 hrs or so. I usually buy the plain Baken-ets. You can find Sue's Crackers (what I call Krivel Krackers) here: http://uclbs.org/recipes/bmc/suecrackers.php I cut up pieces of souffle bread and dry it for a version of light crackers. Guest guest Posted January 17, 2010 Report Share Posted January 17, 2010 My favourite is, 1/2 onion, diced juice of 1 li1 small to medium tomato diced (I do these first so that the onion can soak in the lime juice for a while to make it slightly less potent) 4 avocados a sprinkle of pepper and cumin I've never had a guac that I've loved as much as this (cilantro can be added but it tastes like dishwashing detergent to me ). My bf came up with this combination based on elements that he liked of various guacs.
