Guest guest Posted January 17, 2010 Report Share Posted January 17, 2010 Guacamole II (an LSCDL recipe) 2 ripe medium avocados, peeled, pitted and diced 1 large ripe tomato, peeled seeded and diced ¼ cup finely chopped red onion -or- 1 tablespoon homemade red onion powder 2 cloves garlic, minced Juice of 1 large lemon ½ teaspoon ground cumin ½ teaspoon white pepper ½ teaspoon salt (optional) Combine all ingredients. Toss well, but carefully, so as to maintain the chunky consistency. Variation: Blend all ingredients except tomatoes with a mixer or hand blender. Turn into a bowl and carefully stir in the tomatoes. Note: the red onion is fairly spicy.
