Question about Sue's Crackers / Krivel Crackers

This makes a big batch and I'm not sure I have the energy to cook the whole thing today (I only have two cookie sheets). Does it still turn out ok if you spread the baking part out over a couple of days?

I figured I have to put the 4 "dough logs" in the freezer anyway. Has anyone tried leaving a couple in the freezer and baking a day or two later?

You bet!

In fact, the best way is to mix a double or even triple batch, shape it

into logs, and freeze, and then when you want crackers, you pull a log

out, slice, and bake!
