Does anyone use a pressure cooker regularly?

Do you prepare meats/soup only, or veggies too?

Are one-pot meals possible? Recipe Ideas? Websites?

Cooking SCD for a family of 4 - what size do you reco?

If so what brand do you reco? Where did you purchase?

Kim,

I use a pressure cooker regularly and have for years. I

mostly use it to cook beans, soups and stews. Other than the chicken

soup, I don’t cook meat in it, because we like our meat browned,

and if its browned I add the meat AFTER I pressure cook everything else.

My pressure cooker is really old, over 10 years, but it still

works although I did have to replace the gasket once. It is a Fagor.

When I get another one I will probably look for this brand again because it has

been so fabulous.

For two months I cooked the chicken soup the 4 hours on the

stove. But the last two times I made it, used the pressure cooker and

cooked the soup on high pressure for 30 minutes and we thought the soup was better.

I am also now using the pressure cooker to make my broths. It is

working well, get all the gel-ing, etc. I have not eaten canned

beans since I got my pressure cooker. Beans are super easy and depending

on the bean you only need to cook on high pressure 4-12 minutes. I

cook large amounts then freeze one to two cup packets so I always have beans on

hand for soups and stews.

I also cook pumpkin and butternut squash in the pressure cooker.

Anyway, I can’t imagine my kitchen without a pressure cooker J

Hi! I use my pressure cookers (I have 3 ... all digitals) several times a week.A great source for wonderful recipes is the various books by Lorna Sass. She has a websitehttp://pressurecookingwithlornasass.wordpress.com/I have found many of her recipes to be SCD ok (I'm only a newbie, but they looked ok to me) or they can be easily made so.There is also a very active Pressure Cooker group on yahoo.... lots and lots of recipes and very helpful people and a wonderful leader .... Ray.I frequently make soups and stews. Most have canned tomatoes, but I just substitute "fresh" plum tomatoes. I put the fresh in quotes because this time of year most plum tomatoes do a lot of

traveling, at least to where I

live. I find the taste of the non-canned ones to be better anyway. I just bought a dehydrator to dry my summer crop, especially tomatoes so I can add the dried tomato to the soups and stews. I think it will be a lot of trial and error :)I have the 5 qt. and the 7 qt. Wolfgang Puck and an 8 qt. Cooks Essentials. I think the 7 qt. size would be ideal for you. When I was cooking grains I used the 5 qt. for the grains and the 7 qt for the stews so I could make both for the meal easily and quickly. Without the grains they are all 1 pot and can be reheated in the PC, because the WP pressure cookers come with a glass lid.Hope that helps.Regards .... How long do you cook the broth in the pressure cooker to get the

gelatin out of the bones?

Cathy,

I bring the pressure to high, then lower the temp to keep the

pressure at high, and cook for thirty minutes at high pressure. After the

thirty minutes, I take the pressure cooker off the stove and let it cool –

the natural release method – until no more pressure is coming out.

(usually 30 minutes or an hour, but I’ve left it sitting there several

hours when I wasn’t able to get to it.)

My broth has turned out perfect every time doing it this way and

has that gel-like consistency,
