Guest guest Posted January 21, 2010 Report Share Posted January 21, 2010 Okay, this recipe will take a little tweaking to make it SCD legal, but I thought it was a good idea...my comments are in purple.http://www.bakespace.com/recipes/detail/Sauteed-Bananas-With-Cream-Cheese-Sauce/13345/#recipe-storyINGREDIENTS4 small bananas3 Tbs splenda for baking ***use honey (or other legal sweetener)***5 oz fat free cream cheese ***use well dripped yogurt***1/2 C Skim or 1% milk ***I would use water...skim milk tastes like water to me anyways***1/2 tsp ground cinnamonDIRECTIONSCube cream cheese and place in sauce pan to soften. Mean while peel bananas and slice to a desired thickness, do not slice too thin as they will become mushy when sauteed. Spriknle bananas with 1/2 of the cinnamon or to taste. Spray a skillet with butter flavored spray ***Ick. Use real butter!*** and heat over medium high heat. Add bananas to pan. After a few minutes check them, if they are browned turned them over, if not let them cook a little longer. They basically caramelize and give a great flavor. When the bananas are done cover to keep warm and set aside. Combine the splenda ***honey (or other legal sweetener)***, milk ***water (or omit, if possible I guess*** and remaining cinnamon in the sauce pan with the cream ***yogurt*** cheese. Heat over low flame stirring constantly to melt the cream ***yogurt*** cheese, try not to boil the suace. Once it is melted and creamy divide the bananas into 4 bowls, top each with a fourth of the cream sauce. She sliced them lengthwise, sauteed in butter, and added sugar. The cream cheese and cinnamon sound like great additions! In fact, this sounds like dessert. Mama considered it an accompaniment. I don't really have 'dessert' anymore, just 'meals' and 'snacks.' The dessertiest things I eat are green smoothies, pecan butter on souffle bread, and yogurt w/ raspberry jam. I'm glad though. I like eating real food and enjoying it =) I think we've all changed our ideas of dessert. My dessertiest thing is whipped SCD gelatin. I make it with either the legal Welch's grape juice, thinned with at least as much water than juice, or more. A couple of days ago I had some extra squeezed lime juice so I just used a few tablespoons of that plus a shake of stevia. It was very delicate -- limeade gelatin? What I do with it is put some of that in the blender with some frozen berries and/or a banana and whiz it up. It's sort of like pudding or so I tell myself. I love to have squash buttons heated up with yogurt top (that's what I call the delicious, thick creamy top that you get after you refrigerate your yogurt- I always scrape that top layer off and save it).
