With my husband's 50th birthday coming up, this might be " the gift " I also found your explanation on how Starbuck's roasts their beans an eye opener.... " They roast their beans beyond what's called " second crack " -- that is, the beans are roasted to the point of literally beginning to turn to charcoal -- they will literally catch fire as the coffee oils release if the person roasting/tending the roaster is not careful. And THAT is hard on the gut. " Here at home we make very strong coffee and it has never bothered my stomach (I don't have any identified digestion issues but follow SCD because it is such a healthy way of eating). However, whenever I have coffee from either Starbucks or Tim Horton's, I get a vicious stomachache -perhaps it's in the roasting of the beans....
