I took the drippings/broth/stock/whatever you want to call it from one crock pot chicken, about 1 or 1.5 cups. I heated it up on the stove to melt the fat and gelatin. I whisked two egg yolks with a little yogurt cheese, and gradually whisked in about a ladleful of broth so it wouldn't curdle. I then slowly added this mixture to the broth on the stove, and stirred over low heat for a few minutes. Didn't do anything. Turned the heat up. DIdn't do anything. Eventually the heat was at medium on the stove and I had been stirring for half an hour and it was STILL completely watery. What's the deal???? I'm very disappointed. I wanted some gravy!! Guest guest Posted January 23, 2010 Report Share Posted January 23, 2010 Alyssa, Bummer about the gravy! I was just looking it up, and egg yolks are listed as a good thickener for sauces. Since you took pains not to just be dumping them into the hot liquid, which produces scrambled eggs, the only thing I can think of is that maybe you had too much liquid for the amount of egg yolks? Guest guest Posted January 23, 2010 Report Share Posted January 23, 2010 Alyssa, Try a blender or Cuisinart. I use my Vitamix for making gravy and it turns out awesome each time. I take the veggies that I set around the meat or chicken while it was cooking (usually carrots, onions, garlic), add a bit of the drippings and blend it all on high. I have thick gravy that is really yummy. Its so yummy that my cajun home cooking mother in law makes all of hers this way now. Of course I cannot take the credit for the smoothness, but it IS easy. I pour it on veggies, meat and have even eaten it as a thick soup. I have not tried it in any other machine, just the Vitamix. You can try it though and see if you get anything worth eating. Pour it into a saucepan and turn the heat on high, so that it boils, then turn it down, but only slightly. But it has to keep boiling until almost all of the water steams out of it. Believe me, you'll be left with fabulous gravy. I had some again tonight (from Cornish game hens). And excellent beef gravy the other night after doing a roast in the crockpot. It does take a while for the water to evaporate; it can take 20 minutes or more. But it will happen; and don't walk away from it for too long, or in the end you may have no liquid left and it sticking to the pan!I have to ask, though. How much liquid did you start out with?
