I found this SCD legal recipe in More magazine while waiting for my bone density test and decided to copy it down in case someone wanted to try it! My mom so nicely copied down what I couldn't get before they took me back. Enjoy! Roasted Salmon 4 skinless salmon fillets 1/4 tsp salt 2 ruby red grapefruits 2 tsp olive oil 1 tbsp minced shallot 1 tsp fresh ginger, peeled and grated 2 1/2 tsp honey pinch of cayenne pepper 2 tsp lemon juice 2 tbsp fresh basil, shredded 1. Preheat oven to 350* 2. Season salmon with salt, place in baking dish, and roast until cooked through, about 18 minutes. 3. While salmon is cooking, prepare sauce. Peel and cut one grapefruit into sections by removing each segment from its membrane with a paring knife. Cut segments in half and set aside. Juice the other grapefruit and set the juice aside. 4. In a medium skillet, heat the oil over medium heat. Add shallot. Cook, stirring until softened, about 2 minutes. Add the ginger, grapefruit juice, honey and cayenne pepper, bring to a simmer. Cook until sauce is reduced by 1/2 (about 10 minutes). Add lemon juice and salt to taste. Right before serving, toss grapefruit and basil into sauce. Spoon sauce over salmon and serve with lemon broccolini (recipe follows). Lemon Broccolini 1 lb broccolini 1 tbsp fresh lemon juice 1 tbsp olive oil 1 tbsp finely grated lemon zest 1/4 tsp salt pinch of pepper 1. Wash and trim the broccolini 2. Steam until crisp, yet tender (about 5 minutes) 3. Drain. Whisk together lemon juice, oil, zest, salt and pepper. 4. Add the broccolini and toss to coat. Broccolini (I see it on Foodnetwork a lot) is very hard to find where I live. I think I've seen it twice where I live but at the time, it didn't look so great so I have used broccoli instead.
