Guest guest Posted March 25, 2001 Report Share Posted March 25, 2001 Hi all: I have a question about using stevia. I bought some liquid stevia at Copp's and would like to use it. I have a really hard time with the gfcf recipes anyway, though, so I'm really hesitant to make any substitutions. How do you acount for the bulk of say, 1 cup sugar, when you substitute a liquid stevia. The amounts are really different anyway, since I understand that stevia is much sweeter than sugar. I plan on starting Ebony on her acidophilus plus and low sugar, low yeast diet after I get home from the hospital (having a baby on the 5th) and would like to get this all staightened out in my head beforehand. Could someone, who maybe uses stevia, let me know what they do for substitutions. (In case it makes a difference...the brand name of the stevia I bought is Now Stevia liquid extract.) Guest guest Posted March 25, 2001 Report Share Posted March 25, 2001 From the Stevia Cookbook (and it works...I use this) 1 cp sugar = 1 tsp stevia powder = 1 tsp stevia liquid 1 Tbsp sugar = 1/4 tsp stevia powder = 6 to 9 drops stevia liquid 1 tsp sugar = 1/16 (pinch) stevia powder = 2 to 4 drops stevia liquid To make your own " working solution " stevia liquid, use 1 tsp stevia powder to 3 Tbsp water...store in dropper bottle in the fridge. You get more for your money this way.
